The study, led by Mary Harper Simmons, a nutrition graduate student at Samford University, indicates that baby carrots can be an easy and convenient way to boost one's diet with essential vitamins and antioxidants.
The research compared the effects of eating baby carrots, taking a multivitamin supplement, and combining both, and found that the combination of carrots and supplements led to the highest increase in skin carotenoids. This supports the "food first" philosophy, emphasizing the importance of whole foods in nutrition.
Dr. Sander Kersten from Cornell University, an expert in nutritional sciences, notes that high vegetable intake is linked to a reduced risk of chronic diseases and that carrots, being rich in beta-carotene, contribute to vitamin A levels, which are vital for various bodily functions.
The study's findings underscore the importance of encouraging young adults to incorporate more vegetables into their diets, with the message being particularly relevant for those aged 18 to 30 and college students, who often struggle to meet the recommended daily intake of vegetables.
